Working for a large hospitality venue encompassing accommodation and dining this role will be responsible for catering and hospitality standards across the organisation, managing and developing the in house Hospitality delivery teams.
You will be instrumental in the planning and delivery of any new catering and function operations within the Estate.
KEY TASKS :
* To oversee the catering & function delivery across the estate, providing an in-depth knowledge of the business in the diary ensuring adequately trained staff and services are available to deliver the forthcoming bookings, both short and long term.
* Achievement of first class service, high standard of presentation of function rooms and excellent rates of satisfaction from residential and hospitality guests.
* To line manage the Function Managers to ensure they work within budgets for staffing and expenditure. Supporting their management and development of the team with attention to staffing levels, recruitment and training and safe working practices.
* To oversee the wider hospitality teams in the absence of the Accommodation Manager.
* To line manage the Head Florist in achieving their budgets and income targets. Supporting their management and development of the team with attention to risk assessments, staffing levels and recruitment.
* To manage the Catering Contact to ensure contractual compliance is achieved from the Catering Contractor.
* To carry out regular reviews and spot checks across the entire catering operation to ensure the Service Level Agreement (SLA) is being achieved and Key Performance Indicators (KPI's) being met. Including regularly monitoring of the day-to-day operational performance.
* To keep abreast of trends and develop of menus with the contract caterers, keep current with competitor prices to ensure the organistion offers clients best value.
* Monitoring catering P&L and reporting. Look for additional revenue streams and report on viability.
The role is varied and challenging and to succeed, the person appointed will already operate as a deputy hotel manager or venue operations manager, with experience gained in a five star hotel or top notch, Country House environment. They will need exceptional high standards of appearance and good attention to detail. They will need to have the management skills required to lead the function managers and front of house staff, getting the best out of the team. Strong communication skills are vital as there could be a number of functions running at the same time
This is a permanent position, working flexibly 40 hours each week, although as you will already know from your own experience, supporting a successful event sometimes requires long shifts and out of hours working. The job would require weekend working to ensure the success of the department.
