JOB DESCRIPTION

Job Title: Chef De Partie

Job Band: Team Member

Reports to: Head Chef

Positions Supervised: Kitchen Team

Job Scope

In accordance with Genuine Hotels policies and procedures, oversee, and manage the Kitchen functions. Assume the day to day responsibility for the smooth operation of the Kitchen departments. Maximise all aspects of profitability through revenue generation and productivity whilst maintaining standards. Promote the desired work culture around the Genuine brand.

Key Relationships

General Manager, Operations Manager, Sales Manager, Departmental Heads, Team Members. Interacts with Hotel Guests, suppliers and competitors.

Essential Duties and Responsibilities

• Participates in the development of the hotel’s business strategies
• Monitors all produce and meat for freshness
• Maintains product consistency by conducting inspections of seasonings, portion and appearance of food
• Coordinates service with restaurant and banquet operations
• Monitors the inventory, purchasing and disbursement of all supplies
• Ensures that proper sanitation practices are followed
• To effect good portion control and pleasing presentation of all dishes.
• To attend daily Kitchen meetings with Kitchen Team to ensure smooth running of all kitchen departments.
• To ensure that all areas under your control satisfy the most stringent hygiene requirements.
• To advise Sous or Head Chef when stocks are running low to enable reordering.
• To ensure that all stocks are being kept securely and under the correct conditions applicable to each type of commodity stored.
• To constantly update your knowledge and skills for the good of the establishment and the profession.
• All equipment is of good order and to report any maintenance issues to the Sous or Head Chef immediately.
