JOB DESCRIPTION
Job Title: Food and Beverage Supervisor
Job Band: Junior Management / Duty Manager
Reports to: C & B Manager
Positions Supervised: Food and Beverage Team Members
Job Scope
Under the guidance of the Operations Manager and in accordance with Genuine Hotels policies and procedures, oversee, direct and manage the food and beverage functions. Assume the day to day responsibility for the smooth operation of all F&B departments and the wider business generally. Maximise all aspects of profitability through revenue generation and productivity whilst maintaining standards. Promote the desired work culture around the Genuine brand.
Key Relationships
General Manager, Operations Manager, C & B Manager, Sales Manager, Departmental Heads, Team Members. Interacts with Hotel Guests, suppliers and competitors.
Essential Duties and Responsibilities
• Oversee the management of restaurants, bars and outlets
• Oversee the management of catering operations
• Oversee the management of banquet operations
• Proactive and leading role in terms of service, culture and development.
• Ensure constructive team communication with an emphasis on training and development to improve service standards.
• Access and use Food and Beverage computer programs
• Co-ordinate and control all issues relating to costs, expenses, wastage, breakages and stock control.
• Ensure you have a visible and involved presence across all areas.
• To develop customer relations and be aware of any possible future requirements.
• To carry out appraisals / job chats as required by Genuine Hotels.
• To carry out Duty Management functions when required.
• To display and for-fill the “Can do” attitude.
• Ensures emergency procedures are practiced and enforced to provide for the security and safety of guests and employees
• Contributes in installing and monitoring cash management programmes including inventories and receivables
• Monitors purchasing practices to ensure compliances with Genuine Hotels policy and procedures
• Assists in selling hotel through personal involvement with all potential markets as required
• Achieve budgeted revenues, prepare monthly forecast, monitor and control food, beverage and labour costs, and maximize profitability within all areas of the food and beverage department.
• Ensure all staff are properly trained on quality and service standards and have the tools and equipment needed to effectively carry out their job functions.
• Works with Operations Manager on manpower planning and management needs
