Reports to: Head Chef and in his absence the Sous Chef
Department: Food & Beverage
Hours: up to 45 hours per week. (rota planned at least 2 weeks in advance, straight shifts)
Salary: Competitive Salary, Meals on duty, Uniform, Access to Hever Castle and Golf Benefits

Main Function: You will work under the guidance of the Head Chef and in his absence the Sous Chef to support the smooth running of the kitchen. You will be expected to learn fast and be able to run the pass and ideally have experience in all sections using your knowledge to develop junior members of the team, ensure the kitchen cleanliness & hygiene levels are kept consistently high. You will be required to keep wastage to a minimum and use the special board to help keep G.P.

This role would suit an individual wanting to develop their talents in a professional kitchen, and also looking at taking a step down from Sous/Head Chef.

Your ultimate aim is to help establish Hever Castle Golf Club as a venue with an outstanding reputation for its hospitality. With developments in the hospitality of the club it’s a great time to be joining the team.

Duties & Responsibilities:
 FOOD PROVISION & KITCHEN MANGEMENT
• To take guidance and instruction form the Senior Chefs and Managers/Supervisors to aid the daily operation of the kitchen.
• To meet desired service standards, including timekeeping and personal presentation.
• To help and create new and exciting food for customers
• Assist in menu planning and daily specials
• Maintain a high standard in the washing up, to ensure all food marks have been cleaned.
• Monitoring junior team members and ensuring they are working to a high standard
• Keeping the kitchen to a good standard of cleanliness

• Maintain food preparation standards if conducting services, in the absence of the Chefs.
• Ensure that all policies and procedures related to the operation of the Food & Beverage department are followed and implemented appropriately with regard to sanitation, food preparation, storage and health and safety. (Details supplied by the Head Chef)
• Carry out the kitchen delivery procedures to ensure all stock is accounted and put away as required when received.
• Help store stocks correctly and help chefs monitor stock levels.
• Help supply staff meals.
• Help with waste disposal routines.
• Work and communicate well with other departments to ensure efficiencies and good relations within the operation.
• Comply with Hever Castle GC Personnel Policies and Procedures.



KNOWLEDGE, SKILLS AND EXPERIENCE REQUIRED:
Knowledge/skills:
• Good Knowledge and eye for detail in kitchen hygiene
• Good Listener and communicator (This is absolutely essential in all areas of your role)
• Good time keeping ( be ready to start your shift on time in the correct uniform)
• Flexible with working hours. Ability to work weekends is essential.
• Work well within a team environment (Supporting colleagues is essential)
• Ability and confidence to prepare basic food dishes
• Be able to think on your feet especially at busy times
Experience:
• At least 1 years, Experience within a Professional Kitchen
• Level 2 Food Hygiene Training Certificate
• Knowledge and experience of running a pass
