We are seeking an energetic, enthusiastic and reliable Sous chef, to support our Head Chef Vitalijs Kaneps in leading his brigade. You would be ultimately responsible for overseeing all aspects of running the kitchen in the Head Chef’s absence.

Busy pub, restaurant and wedding venue overlooking the Swale Estuary encompassing restaurant, bar and superior accommodation for 40+. We are a successful family run business and use beef, lamb, and game of exceptional quality from our own farm. Between 40-150 covers daily, monthly events/functions, outside catering and over 70 weddings per year.
We were awarded Best Dining Pub in Kent 2014 and were awarded our first AA Rosette in September 2015.
We have an extensive kitchen garden, which our chefs utilise daily and enjoy a close relationship with our Head Gardener Jane Rudd who picks to order. Alongside our great facilities, we believe we provide a unique, high quality working environment - with opportunities for our chefs to grow and experience things that inspire them outside the kitchen (Farm trips, butchering, foraging, courses at Hugh Fearnley Whittingstall's River Cottage etc.)
Training and support is provided, not only in catering, but management and self improvement, HR and how to manage teams, business strategy and financials, in a family orientated yet professional organisation.
About our team
We are a very close team of 40 - across 5 different departments. Our chef retention records are good, with most staying at least 2 years. Our Head Chef has been with us 4 years having been promoted from Sous, our Pastry CDP has been with us for 10 years having crossed in from another department. Our other CDP's have also been with us 1-2 years. Our brigade is currently 5, with 2 spaces to fill to bring to an ideal 7.
Job specifications
28 days holiday a year. 50 hours a week. Closed for a week at Christmas every year.
Candidate requirements
We are looking for a confident chef passionate about using fresh locally sourced produce to achieve high quality results, whilst assisting to lead a team in a growing business.
It will be necessary to possess a full driving license or have a reliable method of getting to work. Due to our countryside location public transport is not an option. We are located approximately 30 minutes from the M20/A249 Junction at Detling Hill.
